This shrimp ramen stir-fry, packed with vegetables and made with a flavorful sauce instead of the seasoning packet, is a budget-friendly meal for one.

  2. Heat the remaining 1 teaspoon of sesame oil in a wok or heavy skillet. Add broccoli, carrots, bell pepper, and onion. Sauté until the vegetables are crisp-tender, about 3 minutes.   3. Meanwhile, open the ramen package and discard the seasoning packet. Bring 2½ cups of water to a boil in a small saucepan. Add the noodles and cook for 2 minutes. Drain and stir the noodles into the wok, tossing to coat. Garnish with black and white sesame seeds and chopped green onions.
