This loaded Tex-Mex ground beef and potato skillet combines convenient frozen hash browns and corn, fresh zucchini, and RO-TEL diced tomatoes with green chiles for a flavorful one-dish meal. Serve with tortilla chips or warm, buttered flour tortillas.
